Salty tart with feta cheese and greens




Ingredients

For the tart
250 gr. all purpose flour
100 ml. olive oil
50 ml. milk
1 beaten egg




Put the flour into the bowl of the mixer, add the olive oil and knead it with the dough hook until it becomes a crumbly dough, add the milk & the lightly beaten egg, continue  kneading until it becomes a smooth dough (it doesn't need kneading for a long time, but just all the ingredients to be mixed together) leave in the fridge for at least 30 minutes. 

For the filling
300 gr, various greens (eg spinach, bitter dock leaves, wild chicory, caucalis)
2 fresh onions cut into slices

1 dry onion chopped
150 gr. feta cheese or  creamy cheese
1 cup of sour cream
2 egg yolks
2 tbsp. olive oil

chopped fresh mint leaves


Preparation of filling
Clean all of the greens thoroughly and dry them in absorbent paper. Chop all them finally.  In a deep non-stick pan, heat the olive oil and sauté the  fresh onions & dried onion until brown, add the greens, continue cooking for a few minutes until all of the liquids have been dried . Remove from  heat and leave to cool well. Put in the mixer bowl the melted feta cheese, add sour cream and the two egg yolks, mix well to a smooth cream with balloon whisk, add pepper and chopped mint. Add the cooked greens and mix well.

Preheat the oven to 180°C. Take the tart dough out of the fridge and open a sheet between two non-stick papers with the rolling pin. Grease a tart pan or a round pan with butter and spread the sheet on top, making sure to cover the sides of the pan, make holes with a fork in several places. Half - bake for 20-30 minutes.
Remove from the oven and let the tart cool slightly. Pour the mixture of greens & cheese into the half - baked base and flatten the surface with a rubber spatula. Put it back into the oven, bake for another 40 - 45 minutes at 180°C. 
The salty tart is ready to serve!!
