Mediterranean burning

                                                Cooking time:30 minutes 
                                                Serves:4 
Ingredients
4 perch fish fillets (100 g each)
1 onion
1 can of chopped tomatoes
 4 cloves of garlic
12 black olives seedless
2 tbsp. extra fine olive oil
1/2 cup of red wine
1/2 tbsp. sugar
4 tomato slices
1 bay leaf
a handful of chopped parsley
Salt & Pepper
1 tbsp. hot paprika
Recipe process
Wash the perch fillets and wipe them with absorbent paper, sprinkle with salt & pepper. Peel and chop finely the onion and garlic. Put half of the chopped onion - garlic & half of parsley in a pan, put the perch fillet on top. Sprinkle with the remaining onion - garlic - parsley. Add the tomatoes, oil, sugar, wine, bay leaf and hot paprika. Finally, put a slice of tomato on top of each fish fillet. Bake in  preheated oven at 180°C for about 30 minutes, until the fillets turn to golden brown. Serve in portions as soon as the food comes out of the oven, garnish each dish with three (3) olives.
