Red 'n' hot cock

 Undoubtedly, we are going through the most tough times of the decade!! However, we should be optimistic and  keep in mind that everything ends, whether it's bad or good, it doesn't last for ever! I'll try to make it easier through this site with recipes. So, I suggest you another delicious dish from Greek islands, there you can find pure local products for healthy & tasty food!!


Ingredients

  • 1 big cock cut to pieces
  • 100 ml extra virgin olive oil
  • 50 gr butter
  • 1 chopped onion
  • 2-3 whole cloves of garlic 
  • 1 tbsp plain flour
  • 1 tbsp tomato paste
  • 1 vine-ripened tomato finely chopped
  • a vegetable stock
  • 150 ml lukewarm water
  • 1 tsp of various spices e.g. powder cinamon, grοund nutmeg
  • 1 tsp of hot paprika
  • 1 glass of red vintage wine
  • salt - freshly ground black pepper
  1. In a big heavy based sauce pan heat the oil until hot and saute the pieces of cock from each side until golden, be careful not to burn. 
  2. Transfer the cock pieces to a plate.  
  3. Add the butter and let it melt, then add onion & garlic and cook for 3-4' or until the onion has softened. Springle the flour and stir with a wooden spoon. Add the cock pieces into the pan and stir gently, then pour the wine bring to boil until the wine has evaporate.
  4. Add the tomato & the paste mixed together.
  5. Dissolve the vegetable stock in 150 ml water and pour it gradually into the pan. 
  6. Season with salt - pepper and rest of spices. Cover & cook over a low heat for 60 minutes or until the cock meat is tender.
  7. When it is ready transfer the cock pieces to a serving dish and keep it in a warm place. Drain the sauce through a nylon sieve into a bowl pushing through as much as possible. Then put the sauce into a smaller sauce pan, simmer for 15 minutes until thickened. In case of excess liquid, dissolve 1 teaspoon of flour in half wineglass of water and pour it into the sauce, boil for 2-3 minutes, remove it from heat and keep it warm until serving.

Serve the cock with any kind of pasta, springle with grated cheese. 

It's really a delicious dish!!
